George Washington Carver's Agricultural Bulletins: Some Choice Wild Vegetables
Spring is the time to engage in the pursuit of the wild edible. Weeds from the lowly Dandelion to the coffee producing Chicory, the delicious Salsify Root to the quaking Evening Scented Primrose, or the mildly flavored Galinsoga to the burning sting of Urtica are but a few of the “weeds” we walk by.

Spring is the time to engage in the pursuit of the wild edible. Weeds from the lowly Dandelion to the coffee producing Chicory, the delicious Salsify Root to the quaking Evening Scented Primrose, or the mildly flavored Galinsoga to the burning sting of Urtica are but a few of the “weeds” we walk by every day. George Washington Carver taught impoverished, share-cropping farmers in the South to enrich their meals with nutrient-dense plants readily available. His agriculture bulletins will be on display. Following the ranger talk, park volunteer Linda will share information and recipes about wild edibles.
